Sautéed Polenta with Berries

First, I made great strides today in taking a couple of pictures of this dish while making it (aka, my first post with pictures). Second, a horrible fail in forgetting to  take a picture of the finished product! Oh well, one thing at a time I guess.

You will also have to excuse the measurements, as I really just through some things together without a plan. We went to our new favorite restaurant today for lunch, a hole-in-the-wall barbeque place, and we ate entirely WAY too much food. So the wife and I decided to just make more of a snack for dinner, verse a full meal.

I had some fully cooked polenta (Trader Joe’s) in the pantry, and decided to start with that. I had also gone to the farmers market here in town this morning and picked up some fresh blueberries and strawberries. A great snack was forming in my mind.

So I used to some honey to lightly coat the berries, then cooked the polenta in a skillet with butter, topped the polenta slices with the fruit then finished with a light sprinkling of powdered sugar. Finished product was great, the wife loved it.

Sautéed Polenta with Berries


Handful of strawberries, sliced (told you)

Handful of blueberries

Honey, maybe 2 tbsp’s worth, then more for drizzle

Butter, 1 tbsp

Precooked Polenta, sliced in to 1/2″ slices (I used Trader Joes. It is packaged similar to Jimmy Dean sausage)

Powdered sugar


Combine berries in a small bowl, coat with honey. Toss around to evenly coat.

Add butter to skillet. Once hot, add polenta slices, likely having to work in batches. Cook one side until a nice golden brown, then flip. Cook second side until the same coloring as the first

Plate the polenta. Drizzle with a little honey, then top with berry mixture, finished off with a sprinkling of powdered sugar.
