Beef Tips with Gravy

This is another simple, yet satisfying and hearty meal the whole family will like. You need an hour or so however to get the meat cooked through and tender, so depending on your daily schedule, this might be best reserved for the weekend. The meat can be served over, or with any number of side dishes. I chose mashed potatoes…as I choose mashed potatoes for just about everything, and can eat them for all three meals a day. And they go perfect with the gravy that this recipe makes. Can’t wait for the leftovers tomorrow!!

Beef Tips and Gravy

Ingredients

1 tablespoon vegetable oil

1 pound stew meat

1 onion, chopped

3 cups beef broth

2 tablespoons corn starch

3 tablespoons cold water

Salt and pepper to taste

Directions

Heat oil in sauce pot on medium heat. Once hot, add beef and onions. Stir and cook until the meat is lightly brown and the onions start to be translucent. Add beef broth and bring to a rolling boil. Cover, and reduce heat to low and simmer for one hour and the beef is tender.

In a small bowl, mix cornstarch and water, stir well. Slowly add the cornstarch mixture to the beef mixture, stirring well to incorporate. Simmer for 10 more minutes, or until the gravy has thickened.
